Kyo-ryori was born and has been fostered over a 1200 year history and is representative of long-cherished Japanese cuisine. Kyoto city is situated within a basin and surrounded on all sides by mountains. It is blessed with rich soil and abundant water, which provides very high quality vegetables.Kyo-ryori is cuisine with a focus on vegetables, dry goods, and processed soybean foods, among other foods. Its characteristic subtle flavoring came about from the idea that good quality ingredients should be subjected to as little processing as possible in their preparation. Looking at the evolution of Japanese cuisine, it can be said that today's kyo-ryori has been created by a harmonious combination of taikyo-ryori originating from the banquets of the Heian-era noblemen, honzen-ryori which puts emphasis on the formalities of the samurai, shojin-ryori which developed in temples, and kaiseki-ryori which developed together with the tea ceremony. Kyo-ryori skillfully incorporates the changes in season, draws on the natural flavor of ingredients with a focus on simplicity, and expresses beauty through presentation select serving dishes.

- Katsuramuki refers to a method of cutting and preparing daikon (Japanese radish). It involves cutting the daikon into cylinders of about 10cm in length, then continuously peeling a thin layer of daikon away along the longitudinal axis as though unrolling a roll of paper. You then overlap these thinly peeled layers and cut them into fine strips for use as garnish etc. for sashimi. This is considered an important skill in learning to use a cooking knife.

Food is presented giving consideration to its color and harmony with the dish on which it is arranged. The presentation can be quite bold, depending on the ingredients and dishes employed. Moritsuke is an important aspect of Kyo-ryori which is to be experienced with the eyes, as well as the palate.

- Maiko will visit the roof top beer garden everyday.
During hours when maiko will be in attendance, they will make rounds to each table. Enjoy a pleasant chat and feel free to take pictures with them.
At around 8:00pm, the maiko will perform two kyomai (Kyoto style dance) on our special stage.
